Green Bean Varietals : – Typica, Bourbon and Caturra.
Altitude :- 1200 – 2000 m.a.s.l
Processing Method : – Wet process washed – The coffee cherries are pulped to remove the outer layers of the fruit, leaving just the sticky mucilage. The beans are then soaked in water and left to ferment in tanks between 12 to 72 hours until the mucilage breaks down and is washed off.
Drying Method :- The beans are removed from the tanks and dried on concrete terraces. In some areas where space is limited they can be dried on rooftops.
